Sweet and Salty Peanut Butter Cookie Recipe

G'Day dear friends! Thanks for coming to spend time with me in my little corner of the world Down Under!

Today I would like to share a recipe for Peanut Butter cookies.

I found on the beautiful blog A Spoonful of Sugar and it was adapted from a Donna Hay recipe for peanut butter cookies and it is just delicious!

Time to get the laptop in place and to start baking!

Peanut Butter Cookies

To make these yummy peanut butter cookies you will need:

100 g (1/2 cup) butter, softened
1/2 cup peanut butter
1 teaspoon vanilla essence
1 1/4 cup brown sugar
1 egg
1 1/4 cup plain flour
1/4 teaspoon bicarb soda
1 cup Demerara or similar sugar for decorating

Preheat oven to 180 deg C/350 F/gas mark 4.

Place butter, peanut butter, vanilla and brown sugar in bowl of electric mixer and beat until well combined.

Add the egg and beat until light and fluffy. Add flour and bicarb soda and beat until a smooth dough forms.

Roll one tablespoon of dough into a ball at a time and sprinkle with extra brown sugar. Place on baking trays lined with baking paper.

Then bake for 10-12 minutes. When done, cool on wire racks and then enjoy!

These cookies are so delicious because they are crisp and buttery and the peanut butter flavour is not too over-powering. I will definitely be making these again.

    I can't remember the last time I made peanut butter cookies. I can almost taste yours right now. :D

    Thank you for converting the measurements & temp. for us Americans.
    I am not familiar with Demerara sugar but it looks really pretty sprinkled on top, so I will google it to see if I can find it here.

    Those look yummy- nothing better than a peanut butter cookie with a glass of milk. My recipe for PB cookies have a little bit of cinnamon in them which I always thought was a little odd, but it's tasty.
