Chai Tea Cookies

Well, it's the end of another week! I hope everyone is ready for a great weekend!



This week it was a little quiet around our house as Maddy went to camp!  Big Al was quite happy to have Mum and Dad all to himself but I think that he quietly missed his big sister quite a lot. I did some baking to cheer him up and I think it helped as he now seems back to his usual happy self!


I found this great recipe for Earl Grey tea biscuits on the Martha Stewart site but since Big Al isn't really a fan of earl grey tea, I changed it a bit to make vanilla chai tea cookies.




The recipe is almost identical to the original from Martha.
The ingredients are
2 cups of flour
2 Tablespoons tea leaves (about 4-8 tea bags, depending on the size of the tea bags)
2 sticks/ 8 ounce or 225grams of butter (I used salted and didn't add extra salt to unsalted butter as the recipe suggests)
1/2 cup confectioners/icing sugar
2 tablespoons cornflour
2 teaspoons each of cinnamon and nutmeg
2 tablespoons vanilla extract.






I used Twinings Chai tea for this recipe as this is the chai tea that I regularly drink....the aroma of this tea is just so beautiful!




The first thing I did was grind the tea leaves. 






Next I sifted the flour and then added the tea leaves and the spices to the bowl.




In another bowl I beat the butter, vanilla, sugar and cornflour together for about 3 minutes.


I then added the dry ingredients and mixed everything together until well combined.


I then halved the mixture and rolled it into plastic wrap. It would have been much better to use baking/parchment paper like Martha suggests but I had run out!


You then chill the dough until it is hard again. I kept mine in the freezer for about 1 hour.


When ready to bake, set the oven to about 350 F or 180 C or gas mark 4. Slice the log into 1/4-inch-thick slices and place on lined baking trays.


Bake them until the edges start to go a little brown and cool.




Time for 5 minutes just for me!








I enjoyed a couple of these delicious biscuits for morning tea as I read a new book that my Grandmother gave me recently.

Well, I have had my 5 minutes...I guess I'd better go and get some other jobs done...like cleaning all of those messy dishes from my baking!

Natasha, As a tea lover, this intrigues me! I am not familiar with corn flour. I'll google it :) These do look delicious! I hope your daughter has a great camp experience!

I had to go back and read the recipe again, I couldn't believe that the ground up tea leaves are baked in the biscuits. Well, I never. That's a new one for me. They looked delicious, perfect for when you find those elusive 5 minutes just for you.
