I found this great recipe for Earl Grey tea biscuits on the Martha Stewart site but since Big Al isn't really a fan of earl grey tea, I changed it a bit to make vanilla chai tea cookies.
The recipe is almost identical to the original from Martha.
The ingredients are
2 cups of flour
2 Tablespoons tea leaves (about 4-8 tea bags, depending on the size of the tea bags)
2 sticks/ 8 ounce or 225grams of butter (I used salted and didn't add extra salt to unsalted butter as the recipe suggests)
1/2 cup confectioners/icing sugar
2 tablespoons cornflour
2 teaspoons each of cinnamon and nutmeg
2 tablespoons vanilla extract.
I used Twinings Chai tea for this recipe as this is the chai tea that I regularly drink....the aroma of this tea is just so beautiful!
The first thing I did was grind the tea leaves.
Next I sifted the flour and then added the tea leaves and the spices to the bowl.
In another bowl I beat the butter, vanilla, sugar and cornflour together for about 3 minutes.
I then added the dry ingredients and mixed everything together until well combined.
I then halved the mixture and rolled it into plastic wrap. It would have been much better to use baking/parchment paper like Martha suggests but I had run out!
You then chill the dough until it is hard again. I kept mine in the freezer for about 1 hour.
When ready to bake, set the oven to about 350 F or 180 C or gas mark 4. Slice the log into 1/4-inch-thick slices and place on lined baking trays.
Bake them until the edges start to go a little brown and cool.
Time for 5 minutes just for me!
I enjoyed a couple of these delicious biscuits for morning tea as I read a new book that my Grandmother gave me recently.
It is a book called Aroma and it is all about aromatherapy, (which I am very passionate about; click here to see my recent post) in cooking!
Thanks Nan! You know me well!
I really enjoyed reading this beautiful book while sipping my hot tea.
Well, I have had my 5 minutes...I guess I'd better go and get some other jobs done...like cleaning all of those messy dishes from my baking!
As always, I am so happy that you came to spend 5 minutes of your time with me today and I really appreciate your visit! Thank you!
Don't forget to join me on Sunday for my Sunday Song post.
If you have a song to share on Sunday please feel free to join in and link up! It can be from any of your previous posts and everyone is welcome to join in-the more the merrier!
Best wishes for a beautiful weekend,
