Buttery Chai Tea Cookie Recipe

I found this great recipe for Earl Grey tea biscuits on the Martha Stewart site but since Big Al isn't really a fan of earl grey tea, I tweaked it a bit to make this Chai Tea Cookie Recipe.

Chai Tea Cookie Recipe

I used Twinings Chai tea for this recipe as this is the chai tea that I regularly drink....the aroma of this tea is just so beautiful!

The first thing I did was grind the tea leaves.

Next I sifted the flour and then added the tea leaves and the spices to the bowl.

In another bowl I beat the butter, vanilla, sugar and cornflour together for about 3 minutes.

I then added the dry ingredients and mixed everything together until well combined.

I then halved the mixture and rolled it into plastic wrap. It would have been much better to use baking/parchment paper like Martha suggests but I had run out!

You then chill the dough until it is hard again. I kept mine in the freezer for about 1 hour.

When ready to bake, set the oven to about 350 F or 180 C or gas mark 4. Slice the log into 1/4-inch-thick slices and place on lined baking trays.

Bake them until the edges start to go a little brown and cool.

Chai Tea Cookies
This Chai Tea cookie recipe is rich, buttery and is the perfect afternoon tea treat.
Ingredients
  • 2 cups All purpose flour
  • 2 Tablespoons finely ground Chai Tea leaves (about 4-8 tea bags, depending on the size of the tea bags)
  • 2 sticks/ 8 ounce or 225 grams Unsalted butter
  • 1/2 cup Confectioners/icing sugar
  • 2 tablespoons Cornflour
  • 2 teaspoons Cinnamon
  • 2 teaspoons Nutmeg
  • 2 tablespoons Vanilla extract.
Instructions
Whisk flour, tea, and salt in a small bowl; set aside. In another bowl beat the butter, vanilla, sugar and cornflour together for about 3 minutes. Reduce speed to low; gradually mix in flour mixture until just combined. Divide dough in half. Transfer each half to a piece of parchment paper; shape into logs. Roll in parchment to 1 1/4 inches in diameter. Chill the dough until it is hard again. I kept mine in the freezer for about 1 hour. When ready to bake, set the oven to about 350 F or 180 C or gas mark 4. Slice the log into 1/4-inch-thick slices and place on lined baking trays. Bake them until the edges start to go a little brown, about 13 to 15 minutes. Cool on cooling racks then enjoy these buttery treats before they all disappear.These cookies can be stored for about 5 days in airtight containers at room temperature.
