I found this easy recipe on the Martha Stewart website and they are absolutely delicious! My son Big Al who does not really like pumpkin ate several of them and raved about how "Yummy" they were!
The recipe makes 12 HUGE muffins or 24 smaller ones.
You will need:
3/4 cup vegetable oil, plus more for pan
1 1/2 cups whole-wheat flour,
1 1/2 cups all-purpose flour,
2 teaspoons baking powder
1 tablespoon pumpkin pie spice (I made my own with 1/2 tsp cinnamon,1/4 tsp ground ginger, 1/8 tsp allspice and 1/8 tsp ground nutmeg)
1/2 teaspoon baking soda
2 cups pumpkin puree (I found a place that sells American goodies and I bought a can of Libby's Pumpkin!
1 cup plain low-fat yogurt
3 large eggs
1 cup turbinado/demerara sugar sugar, plus 2 tablespoons more for sprinkling
1 1/2 cups coarsely chopped walnuts
These muffins are so easy to make! Just preheat your oven to 180C/350F degrees. Brush muffin tins (each with oil and set aside.
In a medium bowl, whisk flours, baking powder, pumpkin pie spice, and baking soda; set aside.
In a large bowl, whisk oil, pumpkin puree, yogurt, eggs, and 1 cup sugar to combine; add 1 cup walnuts and reserved dry ingredients. Mix just until moistened (do not overmix).
Divide evenly and spoon batter into muffin tins; sprinkle tops with remaining walnuts and sugar. Bake until a toothpick inserted in the center of a muffin comes out clean, 35 to 40 minutes. Cool 5 minutes in pan.

That's funny... I just ran to Walmart this afternoon and bought 5 large cans of that Libby's goodness. I might suggest you try adding some semi-sweet chocolate chips next time. I always make mine that way and it has made me a very popular lady around the holidays! :-)
