I actually found this recipe for Watermelon and Feta Salad while I was doing a major magazine cull! It is from an old issue of Woman's Day (August 2011) and I'm so glad I tried the recipe before throwing the magazine away!
This Watermelon and Feta Salad recipe really is so delicious and I think it would be a perfect salad to serve at Christmastime because of the beautiful colours.

Ingredients
2 Tbsp olive oil
1 Tbsp white wine vinegar
1 Tbsp fresh lime juice
Kosher salt and pepper
1⁄4 small red onion, thinly sliced
1-lb piece seedless watermelon
1⁄2 seedless cucumber, sliced into half moons
3 cups baby rocket/arugula
3 oz feta cheese, crumbled (about 3/4 cup)
Preparation
In a large bowl, whisk together the oil, vinegar, lime juice, and 1/4 tsp each salt and pepper. Add the onion and let sit, tossing occasionally, for 10 minutes.
Meanwhile, cut the watermelon into thin pieces, about 2 inches in size.
Add the watermelon, cucumber and arugula/rocket to the bowl of onions and gently toss to combine. Top with the feta.
