Nutella Muffins!
These muffins/cupcakes are all over Pinterest so I thought I would give the recipe a try because I am slightly addicted to Nutella....
Well actually, our whole family is VERY addicted to Nutella!
I found several recipes for these muffins but the recipe I used was an adaptation of three recipes from casaveneracion.com, babble.com and bakingbites.com
140 g./2/3 cup butter, softened to room temperature
3/4 c. white sugar
3 eggs
1/2 tsp. of vanilla
1-3/4 c. of all purpose flour
1/4 tsp. salt
2 tsp. baking powder
9-12 tsps. of Nutella...or more!
Method:
Preheat the oven to 325F/165C.
First, you need to have all your ingredients at room temperature, including the eggs and the Nutella.
After sifting the flour and rising agents, beat the butter and sugar together in another bowl until the mixture is light and creamy. Add the eggs, one at a time, beating after each addition. Stir in the vanilla and then add the flour mixture and mix again. The mixture will appear quite lumpy at first but keep mixing until you have a smooth batter.
The batter will be heavy because the batter is very short (it has a high proportion of fat to flour)-just keep persevering because the batter needs to be thick (the same consistency as Nutella) so that you can swirl the two together easily.
Fill the pans until about 3/4 full.

Top with a generous teaspoonful of Nutella. Take a toothpick, dip into the batter until the tip hits the bottom of the pan. Using a scooping motion, swirl the Nutella with the batter so that some of the batter comes up on top of the Nutella.
Bake for 20 minutes.

I froze these Nutella Muffins individually in ziplock bags and gave them to the kids for their school morning tea treat.

I think Nutella is have a resurgence thanks to blogland and Pinterest. I recently made some Nutella hazelnut twists (on my food board on Pinterest) that used Pillsbury rolls - delicious. These look like a better option for lunches though.
