I hope that everyone has had a wonderful start to the weekend and to the month of June! Can you believe there are only 205 days until Christmas? The year is certainly flying by!
This week we have been as busy as usual with school, work and sporting commitments but with only a couple of weeks left until the winter vacation we are happy to keep working hard to be rewarded with three weeks of holiday fun!
So, to keep us energised (and to satisfy our cravings for sweet things!), I have been baking lots of cookies!
Over the years I have found and used so many choc chip cookie recipes but the recipe I am sharing today would have to be my family's favourite. It is easy, never fails to please and is easy to modify if you want add other ingredients like dried fruit or nuts.
This really is the BEST Choc Chip Cookie Recipe Ever!
Choc Chip Cookies
Ingredients
8 tbsp/115 grams softened butter
3/4 c/170 grams packed dark brown sugar
1/2 c/115 grams sugar
1 egg
1 tsp vanilla
1 1/4 c + 3 tbsp/160 grams all purpose flour
1/2 tsp baking soda
1/4 tsp baking powder
8 oz/225 grams chocolate
Method
Preheat oven to 350º F/ 180º C
In a large bowl, cream the butter and sugars. Then add the egg and vanilla stirring until just combined. In another bowl, sift the flour, baking soda and baking powder. Add the flour mixture to the butter mixture and stir.
Add the chocolate chips and mix. Line baking sheets with parchment paper. Scoop 1 inch balls of dough onto the baking sheets and set them about 2 inches apart. Bake for about 15 minutes or until golden, rotating the pans half way through.
Eat and enjoy after they have cooled down a little!
