This Pasta Stackup with Chicken Sausage looked so delicious I knew I had to make it.

The recipe for the Pasta Stackup with Chicken Sausage is still available on line at the Better Homes and Gardens site and I really recommend this dish if you are trying to cut down on your carbs but still crave pasta! It also makes an easy and delicious #SundaySupper

Pasta Stackup with Chicken Sausage

Here is the original BHG recipe for Pasta Stackup with Chicken Sausage:

Ingredients

6 lasagna noodles
1 cup dried tomato halves (not oil packed), coarsely chopped
6 cloves garlic, minced
1 pound fully cooked chicken sausage links, cut in half and then into large pieces
2 tablespoons olive oil
1 5-ounce bag baby spinach
Sea salt and freshly ground pepper
Shaved Parmesan to garnish

Directions

Prepare the lasagna noodles according to package directions, drain (reserving 1 cup of the cooking liquid, and set aside.

Put the chopped sundried tomatoes and the garlic into a bowl and add the reserved cooking liquid.
Place the olive oil in a large skillet over medium-high heat and then add the sausage. Cook the sausage, turning frequently, until heated through and then stir in the garlic mixture and cook for 2 minutes.
Add the spinach and a few pinches of salt and pepper, stir to combine and then remove the pan form the heat.
Layer the lasagna noodles and the sausage mixture into a stack and then garnish with some shaved Parmesan. Serve immediately.

I changed a few things around though, as you do! We used Gluten Free pasta sheets, I cut the sausage into quarters, I added some spinach leaves to some cooked tomatoes and onions and I also used baby bocconcini cheese rather than parmesan. 
I also served the dish with an Italian side salad made with tomatoes, basil and bocconcini cheese drizzled with aged balsamic vinegar and EVOO.

All in all this was a delicious and light meal that our whole family enjoyed...a very successful copycat recipe if I do say so myself!

Say G'day Saturday Linky Party {56} ~ Come Link up your Favourite Blog Post of the Week!

G'day dear friends! Welcome to this week's Say G'day Saturday Linky party!


I'm just doing a quick post to say a very quick G'day and to get this week's linky party started. I hope you don't mind if I post and run today but I am very sad as I am saying Bon Voyage to my sweet Maddy! Today she is off on an exciting trip to Europe!

We only just finished packing her bag about an hour ago!

So, onto this week's party...

A Trip of a Lifetime

Today I'm sharing some details about a trip that my daughter's string ensemble will be going on. They are having a musical school tour to Europe. Maddy leaves on Saturday for Austria, Hungary and the Czech Republic! Here are just some of the amazing places she will be visiting and some of the venues she will be performing at:

Her choir will be performing at the Salzburg Cathedral!

That very afternoon her string ensemble will be performing at the Mirabell Gardens. The Mirabell Palace and gardens is famous for many because several scenes from The Sound of Music were recorded there.

Maria and the children sing 'Do-Re-Mi' while dancing around the horse fountain and using the steps as a musical scale! Make sure you get a photo just like this Maddy!

They will then travel to Prague...


And will be performing at the St Nicholas Cathedral.

They then travel to Budapest and attend workshops at the Kodaly Institute and perform at St Michael’s Church in Budapest. The historical baroque church is the home of baroque music in Budapest, named one of the most beautiful baroque buildings in Budapest, Hungary.

They then travel to Vienna...just typing this is making me so excited for them!

In Vienna they will be going to the famous Spanish Riding School;


Attending a performance of Madam Butterfly at the Vienna Opera House;

Wiener Staatsoper

and performing at the Schonbrun Palace!

Say G'Day Saturday Linky Party {55} ~ Delicious and Healthy Zucchini, Banana and Carrot Muffins

This week has been another crazy one at our place. Mr Attorney has been sick and I'm sure we all know how bad men are as patients! I've been joking about him having the "man flu" but it then turned in bronchitis and so he has been very miserable indeed! Luckily I don't have too many classes so I have had a bit time to look after after my patient in between marking papers and looking after Maddy and Big Al!

I did find time to make some healthy muffins for our lunch boxes (you can read about my quest to make healthy snacks for my family's lunches here) and they really turned out well. They are healthy and delicious and my family loved them. They are also full of veges! That's right these muffins have a couple of secret ingredients in them that make them a very clandestine way to get your kids (and husband's!) to eat their vegetables!

Say G'Day Saturday Linky Party {54} ~ Delicious Pumpkin Spice Muffin Recipe

G'day sweet friends! Welcome to this week's Say G'Day Linky Party.

I hope you are ready for a delicious muffin recipe! This week I made Pumpkin Spice Muffins and they were divine! More about that in a minute though because first I need to apologize for being MIA for the last few weeks.  I've been unbelievably busy with school commitments ( for me and for my kids!) and I knew that I needed to take some time to focus on my family and to step away from the blog or I would get way too distracted! I've been quietly lurking keeping up to date with you all on twitter, facebook, google+ and instagram so I don't feel like I'm completely out of the loop!

Along with the mothering, wifeing (is that a word?), teaching, marking, marking, marking.....you get the picture...I've also been trying to stop cheating when it came to my kid's lunch boxes. I try to make sure they always have a healthy sandwich made with wholemeal bread and I always add a serving or two of  fruit but recently it was getting way too easy for me to grab a store bought granola bar for them to snack on. With some of them containing more than 20% sugar and delivering more saturated fat than a packet of chips, I figured I should try to make my own lunch box treats.

So to say goodbye to Winter here in Australia I made a batch of  Pumpkin Spice Muffins!
