This week I am sharing a delicious
This Pasta Stackup with Chicken Sausage looked so delicious I knew I had to make it.
The recipe for the Pasta Stackup with Chicken Sausage is still available on line at the Better Homes and Gardens site and I really recommend this dish if you are trying to cut down on your carbs but still crave pasta! It also makes an easy and delicious #SundaySupper
Ingredients
6 lasagna noodles
1 cup dried tomato halves (not oil packed), coarsely chopped
6 cloves garlic, minced
1 pound fully cooked chicken sausage links, cut in half and then into large pieces
2 tablespoons olive oil
1 5-ounce bag baby spinach
Sea salt and freshly ground pepper
Shaved Parmesan to garnish
Directions
Prepare the lasagna noodles according to package directions, drain (reserving 1 cup of the cooking liquid, and set aside.
Put the chopped sundried tomatoes and the garlic into a bowl and add the reserved cooking liquid.
Place the olive oil in a large skillet over medium-high heat and then add the sausage. Cook the sausage, turning frequently, until heated through and then stir in the garlic mixture and cook for 2 minutes.
Add the spinach and a few pinches of salt and pepper, stir to combine and then remove the pan form the heat.
Layer the lasagna noodles and the sausage mixture into a stack and then garnish with some shaved Parmesan. Serve immediately.
I changed a few things around though, as you do! We used Gluten Free pasta sheets, I cut the sausage into quarters, I added some spinach leaves to some cooked tomatoes and onions and I also used baby bocconcini cheese rather than parmesan.
I also served the dish with an Italian side salad made with tomatoes, basil and bocconcini cheese drizzled with aged balsamic vinegar and EVOO.

G'Day Carolyn! Thanks so much for stopping by. Everything's fine here-I just needed to take a break so I could get organised with my real life! The school term ends in a month so I have heaps of marking and reports and the kids have so many school commitments. We are also making all our last minute plans for our Europe trip in December so I am so incredibly busy! Blogging just had to go on hold for a while. Thank you for checking up on me-you are such a sweetie!
DeleteBest wishes,
Natasha.xo
Hope all is ok with you. Have you shut down your link party?
ReplyDeleteHi BJ! Thank you for visiting. It was so great to hear from you. I am taking an extended break due to the busy time of year. Summer holidays start in a month so I have such a hectic schedule with my own school work and helping the kids with their final exams. We are also getting ready for our big trip next month so I am trying to get all my Christmas shopping and wrapping done by the end of this month! It really is a crazy time of year here! I hope you are well and enjoying the cooler weather over there! Take care and happy November!
DeleteBest wishes,
Natasha. xo
Take care Natasha! Wishing you and your family the best Holiday Season. Have fun!
