Hello sweet friends. Long time no see! It feels very strange to be sitting here writing this blog post after such a long blogging break but after a busy year I finally feel like I am ready to slowly get back to my bloggy home. I have missed you so much and have appreciated the messages, emails and comments.
Muffins made with Eggnog ~ The Perfect Christmas Treat!
Christmas has come early for our family! First, I finally ditched my very old and out-dated iphone and got myself a brand new one!
Second, I bought quite a few cartons of my favourite Christmas drink.... Eggnog!
I love this stuff and I especially love baking with it to make Christmas Eggnog Muffins!
Christmas Eggnog Muffins
Ingredients:
1/2 cup/ 115 grams butter (softened)
3/4 cup sugar
2 eggs
1/2 t. vanilla
2 t. baking powder
1 t. nutmeg (ground)
1/4 t. salt
2 1/2 cup flour
1 cup eggnog
Topping:
1 T. sugar and 1/4 t. nutmeg
Directions:
Preheat oven to 350 degrees. Grease muffin tin (regular or mini).
I used these festive cupcake liners. Aren't they fun!
Beat butter until creamy. Add sugar and beat until fluffy and pale yellow. Add egg one at a time and mix. Beat in extracts, baking powder, nutmeg and salt. Fold in 1/2 flour and 1/2 egg nog. Add remaining flour and egg nog. Scoop into cups and sprinkle topping over batter. Bake for 25 minutes or until bottoms turn golden-brown.
