Hello from sunny Brisbane, Australia, sweet friends! Thank you so much for stopping by to say g'day. I'm so thrilled you are here as I am sharing a favourite recipe of mine for Foodie Friday. It is always a hit at tea parties, fetes as an after school snack or just something sweet to have with your afternoon cuppa.  This Jam and Coconut Slice recipe is an old-fashioned favourite with a cake-like pastry base, a layer of jam and a crispy coconut topping.

This jam and coconut slice recipe is the perfect treat to make when you are catering for a crowd.  It keeps well, not that it actually lasts very long!

Jam and Coconut Slice
This delicious jam and coconut slice has a buttery biscuit base, strawberry jam filling and a sweet coconut topping. It's a real crowd pleaser!
Ingredients
  • 125g (4oz) Butter, softened
  • 1/3 cup (75g) Caster sugar
  • 1 cup (135g) All purpose flour, sifted
  • 1 teaspoon Baking powder
  • 1 Egg yolk
  • 3/4 cup Strawberry jam
  • 1/2 cup (115g) Extra caster sugar for topping
  • 1 Egg, lightly beaten for topping
  • 1 cup (90g) Desiccated coconut
Instructions
1. Preheat the oven to 180°C/350°F; line a 20x30cm (8x12in) slice pan* with non-stick baking paper. 2. Process the butter, sugar, flour and baking powder in a food processor until combined. 3. Add the egg yolk and continue to process until the mixture forms a soft dough. Press into the prepared pan. Bake for 12-15 minutes or until the base is golden brown. Allow to cool then spread with the jam. 4. For the the topping: combine the sugar, egg and coconut. Sprinkle over the jam. Bake for 25 minutes or until golden. Cool in the pan. Cut into squares.
