I'm so happy you have stopped by to say g'day. How was your week? I have had a very busy week; I'm so blessed to be able to do substitute teaching and even more blessed that it's at my daughter's school. I'm not sure how she feels about it though!

 This week I was reminded to never take my 14 yr old son shopping with me when he is hungry (which is ALL the time)! Thankfully this was the only junk food he added to the shopping cart!

I've jumped on the chia seed bandwagon like many other bloggers and this week made a huge batch of chia seed and coconut pudding for breakfast. I love this stuff and feel so full after eating it!

I had a wonderful surprise arrive this week in the form of a Philips food processor! It was free thanks to a loyalty program I am in...all that shopping has finally paid off!

One thing I forgot to post on Instagram was a picture of some delicious Low Carb Oven Baked Cheese Crisps that I made. I've been following a low carb and low sugar diet (LCHF) these last few months and despite a few sugar cravings I've not missed sweets, pasta, bread and other high-carb foods at all. I am however missing crackers with my cheese so after looking for some alternatives I found a few recipes for oven baked cheese crisps. It's not really what I would call a recipe as there are basically only two ingredients but you can change the flavour of the crisps by varying the cheeses and adding spices. I made mine in the oven but many people have suggested that they can be easily made in the microwave as well!

Low Carb Oven Baked Cheese Crisps

You can use any kind of hard cheese, but the results will be different depending on the type you choose. I used cheddar and parmesan for mine. Hard cheeses, such as Parmesan, Romano or Asagio, will make a crispier biscuit whereas cheddar will result in a more chewy and 'lacey' looking biscuit. You just can't use soft melting cheeses like mozarella.

They are so easy to make! Just preheat oven to 350F/180C  then put some parchment paper on a cookie sheet.Toss 1 cup of cheese with any seasonings you'd like but skip the salt: try garlic powder (about half a teaspoon for a cup of cheese), hot pepper, mixed herbs, your favourite chopped fresh herbs, cracked pepper, dried fennel seeds, dried cumin seeds...the flavor combinations are endless! I added a little butter to mine because of my LCHF diet but it is not necessary at all. I also added turmeric to mine. Turmeric has powerful medicinal properties due to the bioactive compounds it contains called curcuminoids, the most important of which is curcumin. It has powerful anti-inflammatory effects and is a very strong antioxidant. Curcumin is also linked to improved brain function and lowering the risk of brain diseases like Alzheimer's Disease. Now, add little spoonfuls of  your mixed cheese all over the parchment-lined cookie sheet. Remember to space them out because they will spread out...a lot! I think one tablespoon of cheese is a good amount.

Bake 5 to 6 minutes until they are a light golden brown (they will be a little darker at the edges). It happens very quickly so do keep an eye of them! If you don’t let them bake for long enough they won't be 'crisps', rather they will just be soft and stretchy cheese!

Take them out of the oven let them cool for a while and after a few minutes, they’ll be crispy and ready to eat. Another great thing about them is that they are modifiable when still warm. If you drape them over an upturned glass for example, they will form a cup that you can fill with anything you like. 

They make a great party snack, lunchbox side, they go perfectly with cheese for your cheese board and will satisfy any cravings you might have for carbs. They are also full of natural protein and fat which our body needs rather than sugar-laden low fat products!
