I'm so happy the weekend is finally here! It's going to be a great weekend for many Aussies as we have a long weekend to celebrate the Queen's Birthday.

I plan on doing some baking and cooking this weekend and I will be getting a few of our meals for the week ready on Sunday. I mentioned last week that like many bloggers I have jumped on the Chia seed bandwagon and I am so glad I did! I've been getting my daily serve of chia in my morning Coconut Chia Seed Pudding. Made with just three ingredients, this healthy pudding is gluten and dairy free and tastes delicious. I make this pudding each Sunday night and the batch will last me the whole week. It makes an excellent breakfast on a hot summer's day when served straight from the fridge. You can top your pudding with yoghurt, fruit, nuts, dried coconut, blackberries, raspberries, goji berries...be as creative as you like!
This incredible super-food has so many health benefits I don't know if I can name them all here! They boost energy, stabilize blood sugar, aid digestion making it a natural treatment for type-2 diabetes, lower cholesterol, contain calcium, manganese, phosphorus, and they have more omega-3 fatty acids than salmon! Just a 28-gram or one-ounce serving of chia has 11 grams of dietary fibre and 4.4 grams of protein, nearly 10 per cent of the daily value (Huffington Post).
You only need a small quantity of chia seeds because they absorb 30 times their volume in liquid! This tiny little seed really is a Super-food!

Coconut Chia Seed Pudding
This pudding made with the superfood Chia seeds is Gluten-Free, Grain-Free, Vegetarian, LCHF and most importantly, it's delicious!
Ingredients
- 2 X 400ml can of sugar-free coconut milk
- 2 tablespoons Maple syrup
- 1/2 cup or 100 grams Chia Seed (white or black)
- Optional: 1 teaspoon Pure vanilla extract
Instructions
Combine the coconut milk, maple syrup and chia seeds in a bowl and stir until blended.Cover and let stand overnight in the fridge to thicken. Stir occasionally to incorporate the seeds if possible then again in the morning.The next morning serve in a small bowl and top with fruit, nuts or a dollop of Greek Yoghurt. The pudding will stay fresh when refrigerated for up to 5 days.
