I have a good excuse though I think.... I am happy to say that Madeleine is now at the half way mark of her final year of schooling!
Madeleine has been doing End-of-Semester exams and assessment all week and she is totally exhausted! I'm exhausted from just keeping her enthused while she was recovering from a cold, helping her draft essays and keeping her sustained during long periods of study. I actually made a special batch of Chocolate Almond and Date Protein Balls to give her energy during her study sessions and she really loved them so I thought I'd share the recipe with you today.
I've actually been trying to kick my sugar habit these last few weeks so have been looking for sweet yet satisfying treats for when I get the munchies and these Chocolate Almond and Date Protein Balls have become my go-to treat every afternoon. They are all over Pinterest and I can see why: they are delicious!
These gluten free treats are naturally sweetened with dates, have a hint of cinnamon and are so delicious. The richness comes from the ground almonds which are full of vitamin e, magnesium, potassium and healthy fats. They also contain Grass-fed butter, a superfood for the heart (and not the evil ingredient it has been made out to be for so long), which is also full of healthy fats and helps to keep you satisfied for a long period of time.

Chocolate Almond and Date Protein Balls
These gluten free treats are naturally sweetened with dates, have a hint of cinnamon and are so delicious. The richness comes from the ground almonds which are full of vitamin e, magnesium, potassium and healthy fats. Grass-fed butter, a superfood for the heart is also full of healthy fats and helps to keep you satisfied for a long period of time.
Ingredients
- 20 Medjool dates, seeded and halved
- 1/2 tsp. Vanilla extract
- 1/3 cup Almond meal
- 1/4 cup LSA (Linseed, Sunflower, Almond)
- 1/3 cup Grass fed butter
- 1/3 cup Unsweetened shredded coconut
- 1/3 cup Best quality natural cocoa powder
- 1 tsp. Cinnamon
- 1/3 cup Extra coconut for rolling
Instructions
Put the dates and vanilla in a food processor and run until a chunky paste forms. Add the butter, coconut, almond meal, LSA, cocoa powder and cinnamon and pulse a few more times. The mixture should form a large sticky ball.
Roll a heaping teaspoon of the mixture between your palms to form a ball and roll each truffle in the extra coconut. Chill in the fridge for an hour before serving. Your delicious Chocolate Almond and Date Protein Balls will keep in the fridge for two weeks when covered.
