In my last few recipe posts I've posted I've mentioned the Low Carb High Fat (LCHF) diet and I've shared a couple of recipes that I follow on this eating plan. I've been so happy with this new diet and have lost about 7 pounds in the last couple of months. I'm not exercising crazily (long walks and stationary bike rides every couple of days), I'm not counting calories and I'm eating lots and lots of butter, cream, and I'm even eating bacon, avocados and the skin from my chicken! I started researching this 'diet' after reading about the CRAZY amounts of sugar in low fat foods and how the obesity crisis all around the world is directly linked to the over consumption of sugar, carbs and processed foods.
Mary Enig PhD is a nutritionist and researcher who was one of the first researchers of trans fatty acids and warned of their dangers before they were widely accepted. She believes that trans fats lower the beneficial type of cholesterol-carrying particles (HDL) and pushed for improved labeling of trans fats on products, which has now become mandatory on products in the U.S. and in Europe. She is also known for her position on the role fats play in diet and health. She rejects the widely held view in the medical community that diets high in saturated fat lead to heart disease. She advocates for a diet based on whole foods and rich in certain saturated fats, such as those found in coconut oil and butter.
Thanks to the work of researchers like Enig, natural foods like grass-fed butter have been making a comeback as a health food. Many studies are showing that it may be one of the healthiest foods for your heart. According to authoritynutrition.com

Somewhere along the way, nutrition professionals decided that foods like butter, meat and eggs were to blame. According to them, these foods caused heart disease because they were high in saturated fat and cholesterol. The June 23, 2014 issue of TIME had headline 'Eat Butter'! Could it be that the tides are turning and butter and natural foods are no longer our enemy?
So it would seems that natural fat is not the enemy and SUGAR is the culprit for Cholesterol and Heart Disease.
Keeping all of this in mind, I have been modifying many of our family's favourite foods by cutting sugar and adding more natural "real" foods to our diet. We haven't given up on yummy treats in the process and these brownies are evidence that we can have our cake and eat it too!

These brownies are chocolatey, dense, rich, and made with coconut flour which is is full of natural fibre and protein to fill you up. The healthy and natural fats found in the butter help balance blood sugar levels and the natural maple syrup provides perfect sweetness. I use Westgold butter from New Zealand for my cooking, baking and eating.

It is high in Vitamin A,D and K content due to the lush pastures and it is produced from milk during the spring season when the grass is greenest. Similar grass-fed butters in America are from Organic Valley Pasture Butter and Kerrygold Butter.

Ooey Gooey Chocolatey Coconut Brownies
These brownies are chocolatey, dense, rich, and made with coconut flour which is is full of natural fibre and protein to fill you up. The healthy and natural fats found in the butter help balance blood sugar levels and the natural maple syrup provides perfect sweetness.
Ingredients
- 1/2 cup Coconut Flour
- 1/2 cup Cocoa powder
- 1/2 cup Grass fed butter
- 3 Eggs
- 1 tsp Vanilla extract
- 1/2 cup Maple syrup
- 2 tbs Left over cold coffee
Instructions
Preheat oven to 330°F/ 170°C/ gas mark 3.Grease a square baking dish or pan (8x8 or 9x9).Mix all ingredients together, either by hand or with an electric mixer.Let the batter sit for a couple of minutes so the coconut flour can absorb some of the moisturePour batter into the baking dish and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.Cool for 30 minutes before cutting into squares and removing from the pan.These brownies store well at room temperature or in the fridge for a few days but be sure to keep them in an airtight container.I actually found they tasted even better the next day!

Prep time: Cook time: Total time: Yield: App 14-16 BrowniesJust a note: these brownies will be quite moist when they first out of the oven, so they must be left to cool for a while. You can store them sealed for a few days at room temperature but if you leave them in the refrigerator they stay fresh for up to two weeks.
