I'm not sure whether they are double choc, triple choc or even quadruple choc but whatever they are they are decadent, rich and very moreish!

Triple Choc Chip Cookies
This could be the best chocolate cookie recipe you will ever find! Adapted from a Donna Hay recipe.
Ingredients
- 240g dark chocolate, chopped
- 220g unsalted butter, softened
- 260g brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 300 g plain (all-purpose) flour, sifted
- 50g cocoa, sifted
- 2 teaspoons bicarbonate (baking) soda
- 1 teaspoon sea salt
- 300g dark chocolate, extra, roughly chopped
- 300g white chocolate, extra, roughly chopped
Instructions
- Preheat the oven to 160°C (320°F).
- Place chocolate in a heatproof bowl over a pan of simmering water. Stir until the chocolate has melted. Set aside.
- Place butter and sugar in bowl of electric mixer and beat for 8−10 minutes. It should be light and creamy.
- Add eggs and vanilla and beat for another 3−4 minutes.
- Gently stir through the flour, cocoa, soda, salt and melted chocolate. Add the chopped chocolate and combine everything.
- Roll tablespoons of the mixture onto baking trays lined with baking paper. Leave room for the cookies to spread.
- Bake for 10−12 minutes or until cracks have formed. Cookies should be just crispy. Cool on wire racks.

Total time: 27 mins.
